Mezcal – Pechuga is a unique, festive subcategory of mezcal traditionally distilled with fruits, spices, and often a piece of raw meat (commonly chicken breast, “pechuga”) suspended in the still during the final distillation. Bottled typically at 40–50% Alcohol % (ABV) , it sits in the Strength : Medium to High range.
Pechuga mezcal is rare, artisanal, and associated with celebrations such as weddings, harvest festivals, and community rituals. The meat (sometimes substituted with turkey, rabbit, or even fruit-only vegetarian variations) is not present in the final liquid, but it imparts texture and complexity. In India, Pechuga is almost unheard of, but globally it has become a prized connoisseur’s mezcal.
